How our business became to be:



This business was born with the cultural exchange between Spain's cooking and how to cook "Aussie Style" in this great island continent, Australia.

My Spanish wife and I make a good combination,  cooking dishes with Hot Chillies, the  strong flavor of olive oil, garlic and different kinds of peppers, sweet and spicy barbecue ... and, of course, the hearty flavors of the Australian style of cuisine.

And is it that little "Chilli" in the food which raises the good mood, I think it may be!

If you taste any of our extra spicy sauces, or chilli chocolate and want to leave us your opinion, we would greatly appreciate it.

We have been making our sauces for over 30 years and we appreciate our customers input.

Trinidad Moruga Scorpion
The New Mexico State University’s Chili Pepper Institute has identified the Trinidad Moruga Scorpion as the newest hottest chilli pepper in the world as of February 2012.

Leaving out the heat the Moruga Scorpion has a tender fruit like flavor, which makes it a unique sweet and hot combination.

This Chilli, seems to be on course to take the title of the Worlds Hottest Chilli.
As you can see from the image above , they are gnarly and ugly, the skin is bumpy and rough, a bit similar to a 7 Pot Primo but different.
It will be interesting to see how they grow in Australia
We were lucky enough to get a few early seeds planted, which are now almost up to selling size,
They will be available mid November, but only a few plants will be available.
7 Pot Douglah

According to many chilli heads this rare variety is with out a doubt, way hotter than the Bhut Jolokia ,Trinidad Douglah is frequently mistakenly named as Trinidad 7pod brown , they are two different varieties
Trinidad Douglah is smaller in size, thinner skin, more bumpy rough skin, and absolutely hotter.

What is really good about this pepper is the smokey flavor that can be found in fresh pods.
7 Pot Brain Strain

This chilli was created by David Cappiello and has a very strong citrus flavor that is joined by SEARING heat that some believe is hotter than a Trinidad Scorpion Butch T!
Worthwhile trying and decide for yourself !
They mature from green to a nice bright red color.
Trinidad Scorpion "Butch T"
 Back in 2004 a chilli grower and sauce maker named Butch Taylor traded with a seed bank.
The seeds for the Trinidad Scorpion were from a grower from New Jersey. Butch grew 3 plants and they looked slightly different from the original growers pods.  Butch saved all the peppers and seeds from that year and then shared
them with people all over the World.

These Butch T Scorpions were tested in late March 2011 and came in at over 1,460,000 Scoville units.
Infinity

The Infinity Chilli was accidently created in England by chilli breeder Nick Woods of Grantham, Lincolnshire.
For two weeks in February 2011, the Infinity Chilli held the Guinness World Record title for the world's hottest chilli with a Scoville scale rating of 1,067,286 Scoville Heat Units.

Trinidad 7 Pot Primo
This 7 Pot variety comes from a man with the web nickname of Primo. His real name Troy Primeaux. He is an accomplished musician and Horticulturist from Louisiana, U.S.. The 7 Pot primo has very lumpy distorted shapes and sometimes will have very long skinny Scorpion like tails. It is extremely hot and has a nice fruity flavor. He created this variety about six years ago crossing a Naga Morich and a Trinidad 7 Pot.
Bhut Jolokia Yellow
The Yellow Bhut Jolokia is a natural variant of the Red Bhut Jolokia.
This pepper is hotter than Fatalii or Devil's Tongue Yellow.
And it does have a Bhut Jolokia taste ,but nicer than the Red version .
It also produces better, giving a good yield. A great tasting chilli with great heat.
Plants will be available mid November
7 Pot Jonah
The 7 Pot Jonah is larger and slightly hotter than the original Pod 7 and according to many, even Hotter than the Bhut Jolokia.
The 7 Pot Jonah has a bumpy surface, plenty of heat and a fruity flavor.
They color from light green to red.
An extremely hot pepper.
